Everyone have a good Thanksgiving? We did. We went up to Montana visited Prince Charming's brother and family. And Princess Flower threw up all day Friday and that night. Like Chubbla said, when at one point PF threw up at the table and I shoved a plate under her to catch it all, "You can tell we're parents now. We just calmly hand her a plate to puke on, wash it off, and sit down to eat." I also wasn't feeling very good that day, was a little pale, but everything stayed down, thank goodness!
Anyway, we had us an excellent feast! Chubbla cooked the turkey, made a bean casserole, stuffing, and baked a pumpkin cheesecake. Yum! I made some gluten-free rosemary roles using Pioneer Woman's recipe and the gluten-free flour mix, as well as well as rosemary mashed potatoes, and baked a GF apple crisp. Yes, we had too much food, but it was all good! The kids got along great which always makes a trip sooo much better. And of course the adults were well behaved. :) We always get along great, which made the decision to leave Montana a few years ago difficult. But the economy and a few other things required us to find another job and place to live.
Today I have another Gluten-Free recipe. I accidently found some Quinoa (pronounced Keen-wah) Flakes in our health food store the other day. I had been looking for them for some time. As luck would have it, I found them when I wasn't looking! It was so perfect because I had a couple of bananas going bad on me, and wanted to make muffins anyway, and here was a recipe for Banana-Quinoa Muffins on the box! I added a little something to them, which I will reveal at the end, that completes them.
If I do say so myself.
Which I do.
So there.
First, turn on that oven to 400.
Next, we'll need 1/2 cup each...
...of Quinoa Flakes and Quinoa Flour.
...Of Baking Powder.
1 teaspoon...
...Of Baking Soda.
1/2 teaspoon...
... of Salt.
Mix all the dry ingredients...
... together in a bowl.
Mash 2 bananas in a separate bowl.
Add 2 eggs...
... and 2 tablespoons...
... of honey.
Add wet ingredients to dry...
... and mix 'em!
At this point I decided I needed more batter because I had a lot of the secret ingredients. But I had only one more banana, so I added half again as much.
This how I usually cook/bake. Get half way through, or almost done, and decide to add more.
Now for the secret ingredients!
That's right, there's more than one!
But less than three.
Can you guess how many there are?? ;)

Chocolate chips and Heath Toffee Bits.

Anyway...
I had the intention of reserving some to put on top of the muffins...
But I added too much in with the batter, so it was more like a little batter to go with the chocolate chips and toffee bits.
Yes, please!
So fill up the wrappers about half way.
Then throw them in the oven for 20-25 minutes.
Well, not literally throw them.
That might be a bit of a mess.
And I hate messes.
It means you have to clean up.
And I hate cleaning.
Turns out my new oven cooks a little hot, so I probably should have put them in there for 18-19 minutes instead.
Oh well.
Look at all that yummy, gooey deliciousness!

Banana-Quinoa Muffins
1/2 c Quinoa Flour
1/2 c Quinoa Flakes
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
2 Tbsp Honey
2 Very Ripe Bananas
2 Eggs
Chocolate chips (opt.)
Heath English Toffee Bits (opt.)
Preheat oven to 400 degrees. Mix flour and flakes with dry ingredients. In separate bowl mix together bananas, eggs, and honey, add to dry ingredients. Add chocolate chips and toffee bits, just mix in. Pour into greased muffin tins 1/2 full. Bake 20-25 minutes at 400 degrees.
